SALMON HEAD ( V-cut )

There is plenty of delicious meat left in a salmon head - especially a large one. The most famous part of the fish’s head is the collar, the succulent, tender and flavorful wedge that exists in the space between the pectoral fins and the gill cover. Larger salmon heads are made for a grill as the delicate meat is protected from overcooking over a direct flame.
